No Cook Tomato Sauce
Toss with 1 lb of hot pasta - I usually leave the sauce on the side so people can put on the amount that they like.
2 lbs ripe tomatoes (about 6 medium)-cut into 1/2 inch pieces 1/2 lb fresh mozzarella cheese cut into 1/2" pieces - I buy it at the deli cut 1/2 inch thick-it saves you some work 1 cup packed fresh basil cut into strips 2 Tablespoons olive oil 1 Tablespoon red wine vinegar 1 teaspoon salt 1/4 teaspoon coarsely ground pepper
Combine tomatoes with their juice and all other ingredients. Allow to stand at room temperature for at least 15 minutes or up to one hr to develop flavor. Makes 7 cups.
